Levoni salami is the standard bearer of excellence when it comes cured salami from Italy. Founded by Ezechiello Levoni in 1911, just outside of Milan, he started own artisan salami production to create the highest standards of what he thought was acceptable. He only used pigs raised in Italy, and created a practice of uncompromising quality to ensure that customers got the best salami available. Levoni became a well known name throughout Europe in 1913 when he went to London to present his Salame Ungherese - which we carry, and is same recipe from 100 years ago - at the international exhibit "Modern Art and Industry.” He was awarded the gold medal at the exhibition. The rest, as they say, is history.
The next big step for the company was when in the same year. Ezechiello purchased a former salami production facility in Castellucchio, in the Mantua province. Ezchiello let his three sons take the company because he trusted only them to keep up the standards that they still ensure to this day. In the years since, they have expanded their lines into mortadella, cooked hams and pancetta.
The care in the selection and dosage of ingredients is also an authentic, flagship component of Levoni production. Spices and herbs are ground and worked out on the spot, right before they are added to the mixture. Every product respects very precise baking, smoking and curing periods, for a final, top quality result. Only this past summer has Levoni ventured into the American market and we are one of only a few, select stores in the country to carry a wider selection of their products.
Each Levoni is available at The Cheese Shop at both Jungle Jim’s locations.
