Starting in 2010, Chef Scott Bridi wanted to create products that represented the diversity of the Brooklyn neighborhood he was from and create meat products that everyone from every type of background could enjoy. Bridi runs the company with only a handful of employees, but in a relatively short seven years his product has reached though most the boroughs of the city and many retail locations throughout the country.
One slice of this Bresaola will make you believe in his mission. The meat itself is aged to perfection, but the addition of porcini mushroom and black pepper puts a whole new spin on this traditional Italian favorite.
