The what: Wuthrich 83% European-Style Unsalted Butter
The why: Are you doing any baking this holiday season? Chances are… if you’re not, someone you know will be. Our suggestion - use Wurthrich (pronounced we-trek) butter and taste what superior butter will do for your treats.
The butter, made in Wisconsin, has 83% fat compared to the 80% found in most domestic made butters. This means you don’t need to use as much and it can be used at higher temperatures. It also enhances the maillard reaction while baking (that’s the fancy French term for browning). This butter took home first place in the 2013 ACS in the unsalted cow's milk butter category - it’s that good - and has been made using the same technique since 1904. For just as long, it’s been a favorite of pastry chefs all across the country.

The gradual approach of the holiday season is cause for plenty of stress, not least of which is the stress about what to drink. Whether attempting to be a gracious guest or an accommodating host, the prospect of selecting the very best libations can be daunting. The challenge is made all the harder if you’re trying to pair your selections with the litany of foods on a holiday table. I’m here to try to de-mystify and streamline your holiday beer choices so you can wow your friends and family with classy, perfect choices that are more than at home with all your turkey, sweet potatoes, ham, cranberry, casseroles and more.
Trying to find a single beer that will be a true gastronomic match with everything on the holiday table is nearly impossible, owing to the sheer diversity of food present. There are simply too many competing flavors, textures and intensities. In this scenario, your best course of action is to simply find a beer whose structural elements will be as versatile as possible that also employ broadly pleasing flavors. Think of beers such as saison, biere de garde, Belgian dubbel and doppelbock. All of these are rich enough to stand up to the heartier dishes while having enough grace to not overpower more subtle foods.
Still here? Ok, good, because there’s still more to learn. If you really want to impress your fellow partygoers and be the star of the show, you could try taking something more adventurous. A biere de champagne like Deus from Belgium will impress with its tiny bubbles and vigorous acidity. Another great choice would be any number of different fruited sour beers. These beers have a fabulous cleansing ability that will keep your palate feeling refreshed rather than getting bogged down by too much rich food. Look for lambics, Flanders reds or Berliner weisses with the fruit addition of your choice. Cherry, cranberry and raspberry will be especially apt choices for your smorgasbord.

Wine Department: A Brief Clarification on Smoke Taint Mythos in the Wake of the Wildfires in California and Beyond
Smoke taint. You know it when you taste it. In the wake of the wildfires that burned tens of thousands of acres in the California counties of Napa, Sonoma and Mendocino, as well as fires in Portugal, Spain, Oregon, Washington, and Chile this year alone, we thought it prudent to talk a little bit about smoke taint in general, and dispel some of the misperceptions relating to this potential flaw in wines.
First off, smoke taint is not just residual ash that lands on the grapes and can be washed off. Grapes exposed to excessive smoke can be at risk for compounds called volatile phenols that can be imbued into the grapes, bonding to the sugars within the grapes to form molecules known as glycosides. Once bonding takes place the volatility shuts down, only to be awakened once fermentation is initiated. This is where the problems arise.
Grapes with thicker skins are most susceptible. Grapes like Cabernet Sauvignon, which in California, were (for the most part) picked before the recent wildfires there. There are still some onologists who debate this, but this is by-and-large proven to be true. This is problematic for red wines due to its requiring maceration with the skins in order to achieve color. White wines won’t be as affected as reds due to lack of skin contact. Grapes that come in contact with smoke between veraison (the onset of ripening) and harvest are most susceptible to smoke taint.
A lot of folks have shared their desires to help our friends in the fire-stricken areas out in California and beyond, and the biggest help you can provide is: buy wine. Support the regions hit hardest by buying their wines and coming back for more. Below are some great wines from the aforementioned areas, including Napa’s Signorello, which its winery burned to the ground, and Mendocino’s Frey Winery.
