What is Kombucha
Kombucha is a fermented tea drink that is highly effervescent. Originating in China, it’s been around since about the year 200 BC. Traditionally black or green tea is the base, then sugar and the SCOBY is added for fermentation.
Now, you may be asking, what exactly is a SCOBY? A SCOBY is a symbiotic culture of bacteria and yeast. In other words, this is where the magic happens. The yeast eats the sugar, which in-turn creates a small amount of alcohol. The alcohol is then converted by the bacteria into nutritious acids and probiotics. The first fermentation usually lasts around 7 days.
First Fermentation vs Second Fermentation?
Bottled kombucha goes through a second fermentation process which typically gives a stronger, more intense taste. This second fermentation is what carbonates the drink. When kombucha is kegged it only ferments once and the CO2 is added as the keg is tapped. First fermentation kombucha is much lighter in taste and some consider it easier to drink. If you don’t like the bottled stuff, we’re excited to provide the opportunity for you to give first fermentation kombucha a chance.
Kombucha on Tap!
For those already converted to the fun and funky world of kombucha, the newest addition to Jungle Jim’s Fairfield will feature 8 taps of first fermentation kombucha from our partners at Fab Ferments. Fans of Fab Ferments can look forward to an array of tasty beverages pouring from ice cold taps, which will be available to drink at the bar, or take home in our Kombucha Bar growlers.
For the uninitiated, or those who think they’re not fans, it’s time to experience kombucha for the first time, again. Why? First fermentation kombucha has a lighter, less intense flavor, but still many of the same benefits of bottled kombucha. The Kombucha Bar at Jungle Jim’s is our way to help bring a little funk into your life, one pint or growler at a time.
We recently stopped by the Fab Ferments Tap Room in Lockland to check out the space, try some kombucha on tap (which is a totally different experience than in the bottle, by the way), and chat with Jordan, one of the duo behind all things Fab Ferments. We took some photos, had some great discussions about kombucha, and sampled some truly delicious creations.
We’ll have more news and information about an all new, exciting venture with Fab Ferments over the next weeks, including a primer on kombucha, and an official announcement about some new spaces inside Jungle Jim’s that are on the horizon.

Having tried Kombucha before (bottled) I was excited for trying a few flavors off the tap. Having a restricted diet and actually "hating" some of the flavors listed I was happily surprised to at least be able to appreciate if not down right like even those flavors. The other surprising lesson from the visit was how drastic the difference between bottled and on tap Kombucha can be. The extra bottle fermentation drastically increases the potency of the flavor (ginger) that we tried side by side. On the other end the on tap Kombucha was smooth, clearer of sediment from brewing and just delicious. I thoroughly enjoyed both and would suggest a side by side taste test if you ever get the chance!
I will say the thought of kombucha itself had me a little weary before visiting Fab Ferments, but I arrived with an open mind ready to try some kombucha for the first time. Jordan was a super awesome dude who was really knowledgeable and passionate about his kombucha. As we went down the line tasting the different flavors on tap I quickly realized, hey this stuff is pretty good! I was actually surprised at some of the flavors that I really liked. The ginger flavors were my favorite, but the one that really stood out to me was Pineapple Cilantro Jalapeno. So if you’re like me and don’t know what to think about kombucha do yourself a favor and dive right in. I will say the stuff on tap is a little easier to get used to before you hit the bottles. Jordan at Fab Ferments is a great person to talk to and learn from if you’re interested in taking the dip into kombucha.
It would be easy to dismiss something like kombucha as a health food thing - I think that's tendency, anyway. Sure, there are plenty of health benefits, but I was personally excited by the prospect of drinking a relatively sugarless but ultimately, shockingly flavorful set of beverages. From the tap, kombucha is an entirely different experience than from the bottle. Less intense, but there's still a lot going on and so much to enjoy. For those who crave soda, or even alcoholic beverages, this is an awesome alternative. That it's actually good for you is just icing on the cake.
A movement has begun over recent years. A movement that takes away from large, impersonal big-box retailers and introduces them to the people doing business not just in their city but all over the United States. These people are local farmers, craftsmen, bakers, families, veterans, and they're all providers with items made locally and sold on a small scale. Origins and History
Earth Day was first celebrated in 1970 when thousands of communities, universities, schools and other organizations not only celebrated our planet, but used the day to also bring attention to environmental reform. Over 20 million Americans participated in the first Earth Day, which was originally proposed by Sen. Gaylord Nelson of Wisconsin (who was later awarded the Presidential Medal of Freedom for being the founder of Earth Day by Bill Clinton in 1995).
Over the years Earth Day supported the creation of the Environmental Protection Agency and contributed to the passage of the Clean Air Act, the Water Quality Improvement Act, the Endangered Species Act and several other environmental laws.
While Earth Day was started in the United state,s it has grown into a global holiday. In the year 2000, over 200 million people participated in 141 countries. In more recent times, the focus of Earth Day has shifted to combating global warming. Last year, 120 countries signed the Paris Agreement, a climate protection treaty between United Nations countries. It was the first major step in combating global warming as an entire planet. According to Earth Day Network, more than a billion people across the globe participate in Earth Day Activities.

Did you know that camel milk has a lot more benefits than just quenching your thirst? That’s right, I said camel milk! With its sharp, sweet taste, it’s the next step in a new era of healthy living. But what is it that makes camel milk different from the milk of a cow or a goat?
Camel milk does not contain many of the same proteins that people are often allergic to in cow’s milk, like A1 casein and Lactoglobulin. I am sitting at my desk in Jungle Jim’s International Market getting ready to write an article for our newsletter. It’s hard to believe tomorrow is Christmas!
